We all face that familiar dilemma, “What should I make for dinner tonight?” It’s a question that can lead to endless scrolling, last-minute takeout, or simply repeating the same few recipes. Why This Recipe Will Become a Family Favorite

My family, like many others, has a deep affection for roasted vegetables. The way they caramelize and sweeten in the oven, developing incredible depth of flavor, makes them an irresistible side dish. And let’s be honest, chicken is a staple in most homes for good reason – it’s versatile, lean, and universally loved. So, the idea of uniting these two beloved components into a single, cohesive meal was an absolute no-brainer. This recipe takes the best of both worlds: succulent, flavor-packed chicken and perfectly tender, savory vegetables, all baked together to create a harmonious dish that pleases every palate.

The concept of “easy dinner and easy cleanup” resonates deeply with anyone managing a busy schedule. This sheet pan approach delivers exactly that. By cooking everything on one pan, you eliminate the need for multiple pots and pans, transforming what could be a daunting cooking session into a breeze. It’s a smart way to ensure you’re providing a wholesome, delicious meal for your loved ones without being chained to the kitchen. This meal isn’t just easy; it’s smart cooking that fits into modern life.

Discovering Open Nature® Products: A Commitment to Quality

One of the true highlights of shopping at Shaw’s Supermarket is the exclusive access to Open Nature® products. This brand is a testament to value, offering minimally processed, high-quality items that cater to a variety of dietary needs and preferences. Whether you’re seeking plant-based options, high-protein choices, or gluten-free alternatives, Open Nature provides something wholesome and delicious for every member of the family. Their commitment to natural ingredients means you can feel good about what you’re serving, ensuring that your meals are not only tasty but also align with a healthier lifestyle.

Among their exceptional offerings, the Open Nature Air Chilled chicken holds a special place in my kitchen. You might wonder, “What exactly is air-chilled chicken?” It’s a method of processing where chickens are individually cooled in a series of purified air chambers, rather than being submerged in water. This meticulous process prevents the chicken from absorbing any retained water, which is a common occurrence with traditional water-chilled methods. The result is a chicken with a more concentrated, intense flavor and a superior texture that responds beautifully to marinades. This means your chicken thighs will soak up every ounce of the delicious marinade, delivering an explosion of flavor in every bite. It’s this kind of quality that truly elevates a simple roasted chicken dish from good to absolutely outstanding.

Mastering Your Roasted Chicken and Vegetables

Cooking chicken and vegetables together on a single sheet pan is not only convenient but also ensures that all the delicious flavors meld beautifully, creating a cohesive and satisfying meal. This method simplifies dinner preparation dramatically, allowing you to enjoy a flavorful meal with minimal fuss.

A Step-by-Step Guide to Perfection

Achieving the perfect roasted chicken and vegetables dish is simpler than you might think. Follow these key steps to ensure your meal is bursting with flavor and cooked to perfection:

  • **Marinate the Chicken:** Begin by preparing your flavorful marinade and letting the chicken thighs soak in it. This step is crucial for infusing the chicken with deep, rich flavors and ensuring tenderness. Allow it to marinate in the refrigerator for a minimum of two hours, or even overnight for maximum taste.
  • **Bake the Bacon:** For irresistibly crispy bacon and a flavorful cooking base, start with a cold oven. Place the bacon on a rimmed baking sheet before preheating the oven. This technique helps the bacon cook evenly and become perfectly crisp every time. Don’t forget to reserve the rendered bacon grease – it’s a secret ingredient that will add incredible depth and smoky flavor to your vegetables!
  • **Prepare Your Vegetables:** While the chicken marinates, wash and chop your chosen vegetables. Butternut squash, Brussels sprouts, and red onion are excellent choices, offering a balance of sweetness, earthiness, and a touch of sharpness. If Brussels sprouts aren’t a family favorite, feel free to substitute with an equal amount of sweet potatoes or broccoli for similar delicious results.
  • **Toss and Season:** In a large bowl, combine your chopped vegetables with the reserved bacon grease, a generous drizzle of olive oil, fresh thyme, and a good pinch of salt and pepper. Toss everything thoroughly to ensure each piece is coated in this flavorful mixture. The bacon grease adds a wonderful savory note that takes the vegetables to the next level.
  • **Arrange on the Sheet Pan:** For even cooking and easy cleanup, arrange the marinated chicken thighs on the same rimmed baking sheet you used for the bacon (no need to wash it!). Surround the chicken with the seasoned vegetables, spreading them out in a single layer to ensure they roast rather than steam.
  • **Roast to Perfection:** Bake your sheet pan dinner in a preheated oven at 425°F (220°C) for approximately 30 minutes. The chicken is perfectly cooked when its internal temperature reaches 165°F (74°C). The vegetables should be tender and beautifully caramelized, with a slight char at the edges, offering a delightful texture contrast to the succulent chicken.

Smart Prep for Stress-Free Meals

This roasted chicken and vegetables recipe is an excellent candidate for make-ahead meal preparation, saving you precious time on busy weeknights. You can prep most of the ingredients in advance, ensuring dinner comes together in a flash when you’re ready to cook. Marinate the chicken the night before or in the morning, letting it absorb maximum flavor. Bake the bacon ahead of time, reserving the precious bacon grease, and chop all your vegetables. Store everything separately in airtight containers in the refrigerator, then simply combine and roast when dinnertime approaches. This level of organization transforms meal prep from a chore into a seamless part of your routine.

PRO TIP: If you notice the chicken skin browning more quickly than you’d like, or before the chicken has reached its ideal internal temperature, loosely cover the baking pan with a sheet of aluminum foil. This helps to prevent over-browning while allowing the chicken and vegetables to continue cooking through to perfection.

Equipment

  • Sealable plastic bag
  • Rimmed baking sheet

Ingredients

Chicken Marinade

  • 4 Open Nature Air Chilled Chicken Thighs
  • 2 tablespoons soy sauce
  • 1 tablespoon orange marmalade
  • 1 tablespoon fresh lemon juice
  • 1 ½ teaspoons fresh ginger (grated)
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

Bacon

  • 8 slices Open Nature Uncured Bacon (uncooked, reserve the bacon grease)
  • 2 tablespoons reserved bacon grease

Roasted Vegetables

  • 3 tablespoons olive oil
  • 3 ½ teaspoons freshly chopped thyme
  • ¾ teaspoon kosher salt
  • ½ teaspoon pepper
  • 1 pound butternut squash (cut into 1-inch pieces)
  • 16 ounces Brussels sprouts (outer leaves and ends removed, cut in half)
  • 1 large red onion (cut into 1-inch pieces)
  • 8.8 ounces O Organics Organic Rice & Vegetables
  • ¼ cup pomegranate arils (for garnish, if desired)

Instructions

Chicken Marinade

  1. Combine the soy sauce, orange marmalade, lemon juice, grated ginger, black pepper, and kosher salt in a resealable plastic bag. Mix well to combine.
  2. Add the 4 chicken thighs to the bag. Seal the bag, ensuring all air is expelled, and move the chicken around to thoroughly coat it with the marinade.
  3. Place the bag in the refrigerator to marinate for a minimum of two hours. If possible, turn the bag over after the first hour to ensure even marination.

Bacon

  1. Arrange the 8 slices of bacon onto a rimmed baking sheet in a single layer.
  2. Place the baking sheet with bacon into a cold oven, then set the oven temperature to 400°F (200°C). Cook for approximately 22 minutes, or until the bacon reaches your desired crispiness. (See recipe note below for more details.)
  3. Carefully remove the crispy bacon from the pan and place it on a plate lined with a paper towel to drain excess grease. Pour the rendered bacon grease into a large, heatproof bowl and set aside. (Do not clean the baking pan; you will use it for the chicken and vegetables.)

Roasted Chicken and Vegetables

  1. Preheat your oven to 425°F (220°C).
  2. In the large bowl containing the reserved bacon grease, add the olive oil, fresh thyme, ¾ teaspoon kosher salt, and ½ teaspoon pepper. Mix thoroughly to combine the seasonings.
  3. Add the cubed butternut squash, halved Brussels sprouts, and red onion pieces to the bowl. Toss vigorously to ensure all the vegetables are evenly coated with the seasoned grease mixture.
  4. Lightly spray the uncleaned rimmed baking sheet (the one used for bacon) with cooking spray. Place the marinated chicken thighs onto the sheet, spacing them out.
  5. Evenly surround the chicken thighs with the seasoned vegetables, spreading them in a single layer across the pan.
  6. Place the baking sheet with the chicken and vegetables into the preheated oven. Bake for approximately 30 minutes, or until the chicken’s internal temperature reaches 165°F (74°C) when measured with a meat thermometer, and the vegetables are tender and caramelized.
  7. While the chicken and vegetables are roasting, cook the O Organics Organic Rice & Vegetables according to the package directions.
  8. Once cooked, remove the sheet pan from the oven. Evenly crumble or chop the cooked bacon and sprinkle it over the chicken and vegetables on the sheet pan.
  9. Serve each dish with a side of the cooked O Organics Organic Rice & Vegetables and garnish with about a tablespoon of pomegranate arils, if desired, for a pop of color and tartness.

Notes

  • For baking bacon: Starting with a cold oven helps the bacon cook more evenly and prevents it from curling excessively. After about 10 minutes at 400°F, begin checking the bacon every three minutes. Total cooking time can vary, but mine is usually done around 22 minutes. Constant monitoring is key, as bacon can burn quickly if left unattended.
  • If you notice the chicken skin is browning too rapidly before the chicken is fully cooked, you can loosely cover the baking pan with aluminum foil to slow the browning process.
