  • Rubber spatula
  • 24-cup mini muffin pan
  • Cooling rack
  • Mixer (for frosting)
  • Piping bag and piping tip (e.g., Wilton #21 Large Open Star Tip)

Ingredients

For the Brownies:

  • 18.3 ounces boxed brownie mix
  • 3 tablespoons water
  • 2 large eggs
  • ½ cup vegetable oil
  • 36 mini peppermint patties

For the Frosting:

  • 8 ounces vanilla buttercream frosting mix (chocolate can also be used)
  • ¾ teaspoon peppermint extract
  • 8 tablespoons butter (room temperature)
  • 2-3 tablespoons milk
  • 1 candy cane (crushed, for garnish)

Instructions

Brownies:

  1. Preheat oven to 350°F (175°C). Prepare a 24-cup mini muffin tin by spraying each cup with cooking spray or a floured baking spray.
  2. In a medium mixing bowl, combine the brownie mix, water, eggs, and vegetable oil. Stir until thoroughly mixed.
  3. Fill 24 muffin cups so that they are about ¾ full with batter. You will have enough batter remaining for an additional 12 brownies.
  4. Bake for 18 minutes.
  5. Upon removing the brownies from the oven, immediately place one mini peppermint patty into the center of each hot brownie. Gently press down.
  6. Allow the brownies to cool in the muffin tin for about two minutes, then carefully transfer them to a cooling rack to cool completely before frosting.
  7. Repeat steps 1-6 with the remaining brownie batter.

Frosting: (Follow if using a boxed frosting mix)

  1. Pour the frosting mix into a mixing bowl. Add the peppermint extract, softened butter, and 2 tablespoons of milk.
  2. Mix on low speed until the ingredients are fully incorporated, then scrape down the sides of the bowl.
  3. Increase the mixer speed to high and beat for at least 3 minutes, or until the frosting is light and fluffy. Add the third tablespoon of milk if the frosting seems too thick.
  4. Place the prepared frosting into a piping bag fitted with your chosen decorating tip (we recommend the Wilton Large Open Star Tip #21).
  5. Generously frost each cooled brownie.
  6. Sprinkle each frosted brownie with some of the crushed candy cane for a festive finish.

Notes

To frost, you can use the boxed frosting mix as directed above, a store-bought canister of pre-made frosting (simply add peppermint extract), or a homemade frosting like our Stabilized Whipped Cream. We used the Wilton Large Open Star Tip #21 in a piping bag to create beautiful swirls.
