Skillet Cookie Perfection

Indulge in the Ultimate Skillet Cookie: The Irresistible Pizookie Recipe

Get ready to dig your spoon into a warm, gooey masterpiece! Topped with a generous scoop of cold vanilla ice cream, this isn’t just a dessert; it’s an experience. We’re talking about the Pizookie – a cookie baked in a skillet, served hot and ready to be devoured.

Warm chocolate chip pizookie in a cast iron skillet topped with melting vanilla ice cream.

When an intense dessert craving strikes, there’s one indulgence that consistently comes to mind: this heavenly cookie pizza, lovingly known as a Pizookie. Its blend of warm, soft cookie and cold, creamy ice cream creates a symphony of textures and temperatures that’s simply unmatched.

You might have heard me, or my husband, refer to it as a “Frgookie” in the past. Yes, I know, it’s not a real word! The actual, widely recognized term is Pizookie, a playful portmanteau of “pizza” and “cookie.” The humorous backstory? My husband, after we’d enjoyed this delightful treat at several restaurants that serve a chocolate cookie in a cast-iron skillet, created his own charmingly incorrect name for it. One place had a unique name for it that I can’t quite recall, but a few months later, he’d say, “Let’s go to the place that has the Frgookie!” And so, it stuck in our household. And boy, do we enthusiastically devour this Pizookie every single time!

This Pizookie recipe concoction is truly to die for! Its perfection is undeniably enhanced by my trusty cast iron skillet, which I initially purchased specifically for this purpose. The skillet is key to achieving that perfect crispy edge and a wonderfully gooey center. While a chocolate chip cookie is the classic choice, I’m confident that this same skillet-baking concept would work beautifully for a decadent brownie Pizookie as well, offering another delightful twist on a beloved dessert.

The beauty of a Pizookie lies in its slightly underbaked state, ensuring a molten, soft interior. Served piping hot directly from the oven, it’s immediately crowned with scoops of rich vanilla ice cream. The moment it graces our table, the scene is less a polite gathering and more akin to a pride of ravenous lionesses attacking their prey – it’s a wonderfully chaotic and utterly joyful scramble! If you’re not ready with a spoon in hand, poised to dig in the instant it arrives, you might find yourself out of luck. It’s a race against time and a testament to how universally loved this dessert is in our home.

Reflecting on our family’s passions, I genuinely believe there’s nothing that ignites more excitement than a fresh Pizookie, perhaps with the sole exception of the Red Sox, and the Patriots coming in a close third. This unwavering enthusiasm was palpable just tonight when I brought it to the table. I vividly recall telling my husband he’d better get into the kitchen immediately, or he wouldn’t stand a chance of getting any. It was truly unbelievable; they descended upon it as if they hadn’t eaten in days, especially our ever-hungry teenage boy. It’s a chaotic but cherished tradition that perfectly encapsulates the joy this dessert brings.

Mastering the Pizookie: Essential Tips for a Flawless Dessert

To ensure your homemade Pizookie is an absolute triumph, here are some invaluable tips that will guarantee a perfectly gooey, irresistible dessert every time:

  1. Avoid Overbaking for a Perfect Texture: The key to a sensational Pizookie is a soft, slightly underbaked center. Be vigilant with your baking time; overbaking will result in harder, chewier edges that might be left behind in the pan. My family, whom I affectionately call “The Annihilators,” much like many Pizookie aficionados, prefers their skillet cookie soft, warm, and wonderfully gooey, as the pictures beautifully illustrate.
  2. Portioning? Prepare for a Delicious Frenzy: You might wonder, “How many does this feed?” Providing an honest answer is quite challenging because enjoying a Pizookie is less about polite servings and more about a joyous, albeit competitive, eating event! It quickly becomes a test of who has the fastest reflexes, the largest spoon, and the most fervent desire to simply inhale it rather than savoring each wonderful flavor. Be ready for a delightful, high-stakes dessert adventure!
  3. Don’t Skimp on the Ice Cream: The contrast of the warm cookie with cold, melting ice cream is what makes a Pizookie legendary. The ice cream will melt quickly, so be sure to add more than you think is necessary – and then maybe a little extra! Even if it melts into a sweet, creamy puddle around the cookie, it’s still an absolutely perfect, irresistible combination that enhances every bite.

Our unwavering love for chocolate chip cookies means there’s only one recipe I have ever used and will ever use: the iconic recipe found on the back of that red and yellow Nestle Toll House Semi-Sweet Morsels bag. It’s truly the best, and I’ve never encountered any issues. In the past, when crafting our beloved “Frgookie,” I often opted for the convenience of refrigerated Toll House cookie dough. My method involved pressing about three-quarters of the dough into the skillet, carefully flattening it to reach the edges of the pan for an even bake. However, this time, I decided to elevate the experience by making our own dough from scratch, which always adds an extra layer of love and deliciousness to the final Pizookie.

  • 1 cup butter, softened two sticks
  • ¾ cup granulated sugar

  • 1 cup Chopped Nuts (optional)

Instructions

Needless to say, every time we serve this Pizookie, someone inevitably feels they didn’t get their “fair share,” especially when there’s not much left. The fight for that last little bit can get hilariously hostile! It also brings up the important (and perhaps less serious) point about sharing. This isn’t a dessert for those who are easily deterred by “double dippers” when sharing directly from the skillet. Of course, you could always opt for separate plates and pre-divide the Pizookie, which would neatly solve any “equal portion” squabbles before they even begin. But where’s the fun in that?
