  • 3 cups granulated sugar
  • 1 teaspoon salt
  • 5 large eggs room temperature
  • 3 cups sifted cake flour
  • ½ cup 7UP soda room temperature
  • 1 tablespoon lemon extract

  • 1 cup confectioners’ sugar
  • 3 tablespoons 7UP soda
  • ½ teaspoon lemon extract

  • Preheat oven to 315° F. Prepare a 10-cup Bundt pan with the nonstick method of your choice, ensuring it is thoroughly greased and floured.
  • In the bowl of your stand mixer fitted with the paddle attachment, beat the softened butter on high speed for 2 minutes until light and creamy. Slowly add the granulated sugar and salt, then cream together for an additional 7 minutes, until the butter mixture is very pale yellow and fluffy.   • Add the large eggs one at a time, mixing well after each addition. Be sure to scrape down the bottom and sides of the bowl as necessary to ensure all ingredients are fully incorporated.
