On a recent visit to Steadfast Farm, a vibrant market and micro farm nestled in the heart of Mesa, Arizona, I had the privilege of witnessing firsthand how Erich Schultz masterfully cultivates fresh, high-quality food for local communities and a growing list of Phoenix-area restaurants – all on an astonishingly compact two-acre plot in suburbia. This innovative approach to farming challenges conventional notions of agriculture and highlights the incredible potential of localized food systems.
Today, I am incredibly excited to be partnering with Farmland, a brand that has been a cornerstone in American kitchens since 1959, consistently delivering great-tasting products to families nationwide. Recognizing the evolving consumer demand for healthier meal options, Farmland has introduced its groundbreaking Pure Farmland product line. These products are crafted with consumer well-being at the forefront, featuring all-natural ingredients, and are completely free from artificial ingredients, preservatives, added hormones, or MSG. In a crucial collaboration, Farmland is working in conjunction with the American Farmland Trust (AFT). AFT’s profound mission is to “sustain the land that sustains all of us,” tirelessly working to preserve precious farmland, championing environmentally sound farming practices, and offering vital support to the dedicated farmers and ranchers across the nation.
Highlighting this critical partnership, Farmland has launched an inspiring initiative: now through December 31, 2019, for every specially-marked Pure Farmland item purchased, they have pledged to protect one square foot of American farmland, with a significant commitment of up to $140,000. This program offers a tangible way for consumers to contribute directly to the future of sustainable agriculture and ensure our nation’s food security.

Years ago, Erich Schultz, who built a successful career in high-end residential and commercial landscape design, found himself drawn into designing several projects for Agritopia. This unique residential community in Gilbert, AZ, is renowned for its design, which intentionally surrounds 22 acres of actively working farmland. It was during this period that Erich developed a profound connection with agricultural practices and the concept of localized food production.

After successfully completing these projects and seeking a significant life change, Erich made the pivotal decision to take over the management of the Agritopia farm. His immediate goal was to enhance its efficiency and boost its productivity, applying his design background to optimize agricultural processes. Over the years, he achieved precisely that, transforming the farm into a model of sustained output.
Eventually, driven by a desire for an even simpler, more focused life, Erich decided to scale down. He leased a mere two acres of land within another burgeoning community, envisioning a new kind of farm. From this vision, the organic, micro market farm known as Steadfast Farm was born, embodying a commitment to intensive, sustainable agriculture on a small footprint.

Redefining Agriculture in Arid Landscapes: Steadfast Farm’s Urban Oasis
When one typically conjures an image of Phoenix, Arizona, and its sprawling surrounding cities and towns, a “farm” is rarely the first thing that comes to mind. Instead, the mental landscape is often dominated by arid desert, hot asphalt, towering office buildings, and densely packed residential areas. The idea of a thriving farm amidst such an urban environment seems almost contradictory. Yet, Erich Schultz has achieved precisely this.

Steadfast Farm is a remarkable testament to modern agricultural ingenuity, flourishing right in the middle of Mesa, Arizona. It is strategically situated within a developing community that is slated to eventually include 15,000 homes and the region’s largest community park. This integration of agriculture within suburban development is not only innovative but also incredibly inspiring.

Visiting Steadfast Farm offers a uniquely wonderful experience. It is a peaceful, profitable, and dynamic piece of land situated right in the heart of suburbia! This ingenious model is truly amazing, and it sparks a hopeful vision: imagine the transformative potential if more such micro farms were integrated into communities across the United States. They could foster local food economies, reduce food miles, and connect residents more closely with where their food comes from.

Pioneering Efficiency: High-Yield Farming on a Micro Scale
Erich Schultz has diligently worked to establish Steadfast Farm as “the smallest farm with the highest yield,” specializing particularly in the cultivation of delicate baby vegetables. The farm itself was constructed with impressive speed, brought to life in a mere two months. A distinguishing feature of Steadfast Farm is its deliberate eschewal of large, mechanized tractors; instead, it relies exclusively on a walk-behind tractor, perfectly suited for its compact scale.
A conventional large John Deere tractor would dwarf this modest plot of land. Moreover, the farm employs minimal tillage practices, a crucial element in maintaining optimal soil health by avoiding disruption of the delicate soil structure and microbial life. This commitment to soil conservation is a cornerstone of their sustainable approach.

Utilizing the efficient walk-behind tractor pictured above, Steadfast Farm demonstrates remarkable productivity: they are able to plant an impressive 10 rows of carrots within a 30-inch bed. This stands in stark contrast to conventional mechanized farm tractors, which typically plant only two rows in the same amount of space. This method dramatically increases planting density and maximizes output per square foot.
Consequently, because of these highly efficient systems and innovative methods, Steadfast Farm can achieve production levels equivalent to 10-20 acres of conventional farming, all on a modest two-acre lot! This level of productivity is truly incredible and showcases the immense potential of intelligent, small-scale agriculture.

Nurturing Nature: The Science of Soil Health and Micro-Greens
Soil health is paramount at Steadfast Farm, a principle Erich understands deeply. He operates under the philosophy that “Nature’s doing things this way for a reason,” choosing to work harmoniously with nature rather than against it. He pays meticulous attention to the specific needs of the soil, ensuring it is fed appropriately and consistently with a rich blend of compost, nutrient-dense fish fertilizer, and organic composted chicken manure. This holistic approach builds and maintains a robust, living soil ecosystem.

A specialty of Steadfast Farm is the cultivation of micro-greens – nutrient-dense young greens harvested approximately two weeks after planting. These include a diverse array (as pictured below, from bottom to top): vibrant pea shoots, tender sunflower sprouts, peppery arugula, robust kale, and crisp broccoli. Once planted, these delicate greens are carefully placed under a continuous 24-hour grow light to optimize their development. With this precise cultivation, a single rack of micro-greens at harvest can yield an impressive $500 worth of produce, highlighting their value and efficiency.

Beyond their visual appeal, these micro-greens are incredibly delicious, bursting with fresh flavor and vital nutrients. Their vibrant colors and intense tastes make them a favorite among local chefs and consumers alike. The care taken in their cultivation translates directly into their exceptional quality.

Ingenuity in Practice: Steadfast Farm’s Innovative Tools and Water Conservation
Erich Schultz possesses a natural aptitude for problem-solving, making the adoption of appropriate tools and machinery that are both labor-saving and cost-efficient a critical priority for Steadfast Farm. This focus on intelligent design is evident in several aspects of the farm’s operations. For instance, when it came to harvesting micro-greens, Erich’s discovery of a specific machine dramatically transformed the process: what once required two people working for four hours could now be accomplished by one person in just 20 minutes with the aid of this single piece of equipment. This translates to significant savings in labor and increased overall productivity.

The old adage, “necessity is the mother of invention,” is certainly put to excellent use here at Steadfast Farm. A prime example can be found in their ingenious washing station. There are two large horse water troughs on the farm, though notably, no horses are in sight. These troughs have been cleverly repurposed: inside each, PVC piping with strategically placed small holes creates a gentle “air bubble bath” system, allowing for the thorough yet delicate washing of freshly harvested produce.

Following the bubble bath, the greens are transferred into one of two full-size washing machines. These machines have been ingeniously reconstructed, fitted with large, holed plastic tubs inside. When put on a spin cycle, they efficiently drain water from the produce, much like an oversized version of a home salad spinner. This method ensures that the greens are thoroughly cleaned and excess water is removed without damage.

I found these repurposed washing machines incredibly clever and effective – truly a “mega salad spinner” for commercial use!

Once spun, the produce is carefully placed onto custom-built drying racks. Box fans, thoughtfully integrated into the rafters above, gently blow air downwards to thoroughly and evenly dry the greens. Customers have consistently reported to Erich that, thanks to these meticulous washing and drying methods, Steadfast Farm’s salad greens can remain fresh in their refrigerators for an impressive 3-4 weeks! This longevity is a significant improvement over typical grocery store produce and a testament to the farm’s commitment to quality and freshness.

Conservation is another critical pillar of operations at Steadfast Farm. Water, a precious resource, especially in Arizona’s arid climate, is utilized with remarkable efficiency. Through the strategic incorporation of a drip irrigation system and targeted micro-sprinklers that water crops from above, the farm achieves its irrigation needs using only one-tenth the amount of water compared to traditional farming methods. This careful management underscores their dedication to sustainable practices.

Seasonal Rhythms and Community Connection
With a meticulously detailed plan, Erich efficiently rotates 6-7 different crops each season at Steadfast Farm. The agricultural year is divided into a robust Fall/Winter season and a productive Spring/Summer season, with April marking the peak period for harvests. Due to Arizona’s triple-digit summer temperatures and the prohibitive cost of water during those months, the farm thoughtfully closes its operations during July and August. This strategic downtime is also crucial, allowing Erich to spend invaluable quality time with his wife and three children. While a farmer’s dedication often means working virtually 24/7, given the endless tasks, prioritizing personal balance and family time is imperative for sustainable well-being.
For Erich, achieving personal balance alongside a strong work ethic is profoundly important. He finds immense honor in growing food that nourishes people, while simultaneously being able to provide for his own family through his passion. It’s a testament to his holistic approach to life and work.

Steadfast Farm cultivates a diverse array of vegetables, carefully selected for demand and suitability to the Arizona climate. These include vibrant red and green leaf lettuce, crisp carrots, spicy radishes, tender baby kale, flavorful Mizuna (an Asian green), delicate baby turnips, and many more. This strategic crop selection ensures both yield and quality for the local market.

The farm’s bounty reaches the community through multiple channels. Each week, Steadfast Farm provides fresh produce for four local farmer’s markets and supplies 25-30 Phoenix-area restaurants. One notable culinary partner, the Handlebar Diner, is conveniently located right next door to the farm. This diner proudly serves delicious salads (I can personally attest, having enjoyed one!) and other dishes featuring the freshest produce directly from Steadfast Farm, truly embodying the “farm-to-table” ethos.

Beyond its direct sales and restaurant partnerships, Steadfast Farm is also significantly supported by a Community Supported Agriculture (CSA) program, demonstrating another vital connection to its local consumers.
Understanding Community Supported Agriculture (CSA)
A Community Supported Agriculture (CSA) model represents a unique partnership between consumers and farmers. In this arrangement, individuals pay a fee to the farmer in advance of the growing season. This upfront capital provides the farmer with essential funds to cover initial costs, such as seeds, equipment, and labor, thereby stabilizing their operations.
In return for their investment, these community members, known as shareholders or members, receive a regular share of the farm’s harvest throughout the season. This often comes in the form of a weekly or bi-weekly box of fresh produce, fostering a direct relationship between the farmer and the eater.
At Steadfast Farm, an impressive 100 local families actively participate in their CSA program. These members receive a carefully curated box of produce, based on the freshest seasonal availability, either weekly or bi-weekly. For convenience, these boxes can be picked up at 17 different locations strategically spread throughout the greater Phoenix area. To me, a CSA is an undeniable win-win for both farmers and consumers, and it’s a model I wholeheartedly endorse and plan to join myself!

Micro-farming in burgeoning communities is undoubtedly a viable and attractive option for farmers dedicated to their craft. Leasing smaller land areas can, in fact, prove to be more profitable due to intensive cultivation and direct market access. Erich Schultz further extends his expertise as a consultant, sharing his invaluable knowledge with aspiring farmers who wish to establish small-scale farms or implement portable/modular farming systems. He has already assisted several farmers across the country in realizing their agricultural dreams, spreading the impact of his innovative approach.

Did you know that an alarming rate of “over 175 acres of U.S. farm and ranch land are lost every hour“? This translates to an astounding 3 acres disappearing every single minute. This rate of farmland conversion is truly frightening. It is deeply saddening to contemplate that farmers are losing the precious land upon which they not only work but often live – land that represents their livelihood and, for many, has been cherished by their families for generations. This continuous loss threatens not only individual farms but also our national food security and agricultural heritage.
The profound connection that farmers and ranchers share with their land, their dedication to sound farming practices, and the essential work they perform are all intricately intertwined. AFT stands out as the only national organization that holistically recognizes and actively champions all these interconnected facets of agriculture, working tirelessly to preserve them for the benefit of all.

Sustainability in agriculture is of paramount importance. The question weighs heavily: how can farmers, facing diminishing land and dwindling resources, continue to provide not only for the consumer market but also for their own families? Furthermore, as the global population continues to grow, how can society’s ever-increasing demand for food be met without robust and sustainable agricultural systems?
From my perspective, farmers are unequivocally the true backbone of America. They nourish us, providing the fundamental sustenance that allows our society to thrive, and it is truly unsettling to imagine where we would be without their tireless efforts. Supporting them is supporting ourselves.
