Ingredients

  • ¾ cup + 2 tablespoons flour (set one teaspoon of flour aside to toss with peaches)
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • ⅛ teaspoon salt
  • 1 egg
  • ⅓ cup milk
  • 2 tablespoons canola oil
  • 1 peach, peeled and diced

Streusel Topping

  • 2 tablespoons flour
  • 3 tablespoons oats
  • 3 tablespoons brown sugar
  • ⅛ teaspoon cinnamon
  • 2 tablespoons butter, chilled

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Butter a 6-cup muffin tin or line with paper muffin cups. If using a 12-cup tin, fill any empty cups with a little water.
  3. In a medium bowl, combine the ¾ cup + 1 tablespoon flour, sugar, baking powder, and salt. Mix well and set aside.
  4. In another medium bowl, beat the egg.
  5. Add milk and canola oil to the beaten egg and mix until combined.
  6. In a small separate bowl, toss the diced peach with the reserved 1 teaspoon of flour.
  7. Pour the wet milk mixture into the dry ingredients all at once.
  8. Add the flour-coated diced peach and stir until just moistened. Be careful not to overmix.
  9. Spoon the batter into the prepared muffin cups, filling each to about two-thirds full.

Streusel Topping

  1. In a small bowl, combine the flour, oats, brown sugar, and cinnamon for the streusel.
