  • 1 teaspoon salt

  • 2 large eggs
  • 2 cups semi-sweet chocolate chips
  • 25 wrapped caramels, unwrapped and cut into quarters
  • 1 cup peanut butter pretzel sandwiches, crushed (see tip above for substitution)

Instructions

  1. Preheat your oven to 375 degrees F (190°C). Line two baking sheets with parchment paper for easy cleanup and consistent baking.
  2. In a small bowl, thoroughly whisk together the flour, baking soda, and salt. Set this dry mixture aside.
  3. In the bowl of a stand mixer fitted with the paddle attachment (or using a hand mixer), cream together the softened butter, granulated sugar, light brown sugar, and vanilla extract until the mixture is light and fluffy. This typically takes about 3-4 minutes.
  4. Add the eggs, one at a time, beating well after each addition until fully incorporated. Remember to scrape down the sides of the bowl with a rubber spatula as needed to ensure everything is evenly mixed.
  5. Gradually add the dry flour mixture to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix. Fold in the semi-sweet chocolate chips.

From Idea to Perfection: The Story Behind These Cookies

On my personal cookie rating scale of 1-4 (with 4 being the absolute best), these Chocolate Chip Caramel Peanut Butter Pretzel Cookies proudly earned 3 rolling pins. While incredibly delicious and a definite crowd-pleaser, I wouldn’t classify them as the ‘ultimate’ Christmas cookie – perhaps because their unique combination is fantastic year-round! I’m certainly looking forward to making them again soon, regardless of the season.

You might recall me mentioning a cookie fail on the 365 Facebook page, and yes, it was related to these very cookies. My initial vision was a grander, more encapsulated creation:

I started by placing a soft caramel atop a whole peanut butter pretzel sandwich, imagining a delightful hidden center.

Then, I carefully enclosed this sweet and salty stack between two flattened tablespoons of our classic chocolate chip cookie dough. The idea was to create massive, surprise-filled cookies.

I wrapped up these incredibly large balls of goodness and placed them onto a cookie sheet, full of anticipation. They were truly gigantic!

BUT… as often happens in baking and in life, the best-laid plans don’t always turn out as expected. The result was, well, a bit of a glorious mess!

Not only did they lose their structural integrity, but the taste wasn’t quite right either. So, I scrapped that ambitious idea and reverted to the simpler, yet far more delicious, approach outlined in the recipe above. Sometimes, less truly is more, especially when it comes to maximizing flavor and texture!
