Ingredients

For the White Gelatin Layer(s)

  • 1 (14-ounce) can sweetened condensed milk
  • 2 packets unflavored Knox gelatin
  • 1 ½ cups boiling water
  • ½ cup cold water

For the Watermelon Layer (Pink)

  • 1 (3-ounce) package Watermelon JELL-O
  • 2 packages unflavored Knox gelatin
  • 2 cups water (divided)

For the Cherry Layer (Red)

  • 1 (3-ounce) package Cherry JELL-O
  • 2 packages unflavored Knox gelatin
  • 2 cups water (divided)

Instructions

  1. Prepare the Dish: Prepare a 9×13-inch baking dish by lightly spraying it with cooking spray. Wipe away any excess spray with a paper towel. This ensures a clean release without affecting the gelatin’s flavor.

White Layer Preparation

  1. Dissolve Condensed Milk: In a medium bowl, combine 1 cup of boiling water with the sweetened condensed milk. Stir until the milk is completely dissolved and smooth.
  2. Bloom Unflavored Gelatin: In a separate small bowl, pour ½ cup of cold water and sprinkle 2 packets of unflavored gelatin over the top. Let it stand for 2-3 minutes until the gelatin appears grainy.
  3. Dissolve Gelatin: Add ½ cup of boiling water to the small bowl with the bloomed gelatin. Stir continuously until the gelatin completely dissolves, leaving no granules.
  4. Combine and Chill: Add the dissolved gelatin mixture to the condensed milk mixture and stir well to combine. Pour this mixture into your prepared baking dish. Chill in the refrigerator for 45 minutes, or until the layer is set but still slightly tacky to the touch. This prevents the next layer from mixing.

Watermelon Layer (Pink) Preparation

  1. Bloom and Dissolve Gelatin: While the white layer chills, pour 1 cup of water into a small saucepan. Sprinkle 2 packets of Knox gelatin over the water. Allow it to sit for 1-2 minutes to bloom.
  2. Heat and Dissolve: Heat the saucepan over low heat, stirring constantly, for about 5 minutes, or until the gelatin completely dissolves. Do not boil.
  3. Add Flavored JELL-O: Remove from heat and add the 1 package of watermelon JELL-O. Stir until it is fully dissolved.
  4. Complete and Pour: Add the second cup of water and mix thoroughly. Allow the mixture to cool slightly (it should be warm, not hot) before gently pouring it over the set white layer in the baking dish. Refrigerate for 15 minutes to allow this layer to set.
  5. Optional White Layer: If you desire an additional white gelatin layer between the watermelon and cherry JELL-O, now is the time to prepare and add it (refer to the notes below for more details). Chill this optional layer for 15 minutes.

Cherry Layer (Red) Preparation

  1. Bloom and Dissolve Gelatin: Similar to the watermelon layer, pour 1 cup of water into a small saucepan and sprinkle 2 packets of Knox gelatin over it. Let it sit for 1-2 minutes.
  2. Heat and Dissolve: Heat on low, stirring constantly, for about 5 minutes, until the gelatin fully dissolves.
  3. Add Flavored JELL-O: Remove from heat and add the package of cherry JELL-O. Stir until dissolved.
  4. Complete and Pour: Add the second cup of water and mix. Let it cool slightly. Gently pour this red cherry layer over the set watermelon layer (or the optional second white layer). Refrigerate for at least 15 minutes, or until fully set. For best results, chill for at least 4 hours, or preferably overnight.
  5. Cut Shapes: Once all layers are completely firm, press heart-shaped cookie cutters into the JELL-O. To maximize the number of hearts, alternate the direction of your cookie cutters (one right-side up, one upside down) to use less space.
  6. Remove Hearts: Using a thin metal spatula, gently loosen and remove the heart shapes from the pan. For easier removal, lightly spray the spatula with cooking spray and wipe off the excess with a paper towel.

Optional Fourth White Layer: If you wish to incorporate a white gelatin layer in between the watermelon and cherry layers, you’ll need to divide your initial white gelatin mixture. Pour 1 cup of the white gelatin mixture into the bottom of the pan as the first layer and chill for 20 minutes until set. After the watermelon layer has set, gently pour the remaining 1 cup of white gelatin over the watermelon layer and refrigerate for another 15 minutes before topping it with the cherry JELL-O. This creates a striking four-layered effect!
