The Evolution of a Cranberry Lover: From Canned Sauce Skeptic to Cranberry Pie Bar Enthusiast
Growing up, my perception of cranberries was largely shaped by that wobbly, jellied cranberry sauce that emerged from a can each holiday season. To my young palate, it seemed an odd, intimidating presence on the dinner table. “How could something that looks like that possibly taste good?” I often wondered, cautiously avoiding it. However, as my culinary journey progressed and my tastes matured, I discovered the true magic of cranberries. Their unique tartness became not something to fear, but a cherished flavor, especially in baking.
The bright, tangy notes of cranberries add an incredible depth to various desserts, transforming them from merely sweet to wonderfully complex. While I’ve long enjoyed incorporating them into cookies and muffins, experimenting with them in a pie bar format has been a revelation. These bars capture the essence of a classic cranberry pie but with the added convenience and delightful texture of a bar. It’s a testament to how ingredients, once misunderstood, can become absolute favorites when explored in new and exciting ways. If you’re a fellow cranberry convert, or even a curious newcomer, these cranberry orange pie bars are sure to win you over!
Beyond bars, cranberries shine in many other baked goods. For instance, these Soft Cranberry Cookies are another fantastic autumn and holiday treat. They strike a perfect balance, not overly sweet, with a wonderfully soft texture and a subtle hint of orange zest that truly brightens their flavor profile. They are a great example of how cranberries and citrus make a winning combination.

Essential Ingredients for Your Delicious Cranberry Pie Bars
Crafting the perfect Cranberry Pie Bars begins with selecting quality ingredients that contribute to their incredible flavor and texture. From the tender, buttery crust to the vibrant, zesty filling and the sweet, tangy glaze, each component plays a crucial role. Here’s a detailed look at what you’ll need to create these holiday favorites:
For the Buttery Crust and Crumbly Topping
- All-purpose flour: The foundation of our tender crust and topping.
- Baking powder: Gives a slight lift and contributes to the bar-like texture.
- Salt: A pinch enhances all the flavors and balances the sweetness.
- Butter (room temperature): Essential for a rich, flavorful, and tender crust. Salted or unsalted works, just adjust added salt if using salted.
- Shortening: Adds flakiness and helps achieve that perfect melt-in-your-mouth quality.
- Granulated white sugar: Sweetens the crust and topping to perfection.
- Large eggs: Bind the ingredients together and add richness.
- Pure vanilla extract: A warm, aromatic note that complements the other flavors.

For the Tart-Sweet Cranberry Filling
- Fresh or frozen cranberries: The star of the show! Both work beautifully; no need to thaw frozen cranberries.
- Granulated sugar: Balances the tartness of the cranberries.
- Cornstarch: A natural thickener that ensures a perfectly set, not runny, filling.
- Orange zest: The secret to that irresistible citrusy brightness that pairs so well with cranberries.
- Fresh orange juice: Adds moisture and a tangy kick to the filling.
- Vanilla extract: Enhances the overall warmth and depth of the fruit flavor.
For the Zesty Orange Glaze
- Powdered sugar: Creates a smooth, sweet base for the drizzle.
- Zest and juice of one orange: Provides a concentrated burst of fresh orange flavor and the right consistency for drizzling.

Step-by-Step Guide: How to Make Easy Cranberry Orange Pie Bars
Making these delightful cranberry orange pie bars is simpler than you might think! Follow these easy steps to create a show-stopping dessert that’s perfect for any occasion.
Preparing the Perfect Pie Bar Crust and Topping
- Preheat and Prepare: Begin by preheating your oven to 350 degrees F (175°C). Line a 9×13-inch baking pan with parchment paper, allowing it to overhang slightly on the longer sides. This simple trick makes lifting the cooled bars out of the pan for clean slicing incredibly easy.
- Combine Dry Ingredients: In a medium-sized bowl, whisk together your all-purpose flour, baking powder, and salt until they are well combined. Set this dry mixture aside.
- Cream Wet Ingredients: In a large mixing bowl, using a hand mixer, cream together the room-temperature butter and shortening on high speed until the mixture is smooth and light. Add the granulated white sugar and continue mixing until it’s fully incorporated and fluffy. Don’t forget to scrape down the sides and bottom of the bowl periodically to ensure everything is evenly mixed.
- Incorporate Eggs and Vanilla: Beat in the large eggs one at a time, followed by the pure vanilla extract. Mix until just combined.
- Add Dry to Wet: Gradually add the flour mixture to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix the dough, as this can result in tough bars.
- Reserve Dough: Scoop out approximately 1 1/4 cups of this dough and set it aside; this will be used for the crumbly topping later.
- Form the Base: Press the remaining dough evenly into the bottom of your prepared baking pan. I find it easiest to drop small dollops of dough across the parchment-lined pan, then gently spread and flatten them with an offset spatula or the back of a spoon to create an even layer.
- First Bake: Bake the crust in the preheated oven for 12 minutes. The edges should appear lightly golden brown, and the center might still look a bit underdone – this is perfectly normal, as it will bake again with the filling.
Crafting the Vibrant Cranberry Filling
- Mix Filling Ingredients: While your crust is partially baking, prepare the cranberry filling. In a large bowl, combine the fresh or frozen cranberries (no need to thaw if frozen), granulated sugar, cornstarch, orange zest, fresh orange juice, and vanilla. Mix everything thoroughly until the cranberries are well coated. The cornstarch will help thicken the juices during baking, creating a luscious filling.
- Spread Over Crust: Once the crust has had its initial bake, carefully remove the pan from the oven. Spread the cranberry mixture evenly over the warm, pre-baked crust.

Assemble and Bake to Golden Perfection
- Add Topping: Take the reserved 1 1/4 cups of dough and crumble it in small dollops over the cranberry filling. Leave some spaces in between the dough dollops so that some of the vibrant cranberry filling peeks through – this adds visual appeal and allows the filling to bubble up beautifully.
- Final Bake: Return the pan to the oven and bake for an additional 35-40 minutes, or until the crumb topping is golden brown and the filling is bubbly. If you notice the topping browning too quickly, you can loosely tent the pan with a piece of aluminum foil to prevent over-browning.
- Cool Completely: Once baked, remove the pan from the oven and place it on a wire rack to cool completely. This step is crucial! Allowing the bars to cool thoroughly ensures the filling sets properly, making them easier to slice and preventing them from falling apart.

Finishing Touch: The Zesty Orange Glaze
- Prepare the Glaze: In a small bowl, whisk together the powdered sugar, fresh orange zest, and orange juice. Start with a small amount of juice and gradually add more, one teaspoon at a time, until you reach a smooth, drizzly consistency. You want it thick enough to cling to the bars but thin enough to flow gracefully.
- Glaze and Serve: Once the cranberry bars are completely cool, use a spoon to drizzle the orange glaze evenly over the top. The glaze will set slightly, adding a beautiful sheen and an extra layer of citrusy sweetness.
- Slice and Enjoy: Carefully lift the entire slab of bars out of the pan using the parchment paper overhang. Transfer them to a cutting board and use a sharp knife to slice them into individual bars. Now they’re ready to be enjoyed!

Frequently Asked Questions About Cranberry Pie Bars
Here are some common questions and helpful tips to ensure your Cranberry Pie Bars turn out perfectly every time.
How do I know when my Cranberry Pie Bars are fully baked?
You’ll know your bars are done when the crust around the edges is a lovely golden brown, and the cranberry filling is visibly bubbly. It’s important to note that the center of the bars might appear slightly less firm than a traditional cake, and the filling may look a bit “underdone” in photos. Rest assured, this is intentional! This “chewy” appearance is a characteristic of these bars, contributing to their soft, sugar cookie bar-like texture. Trust the golden-brown crust and bubbly filling as your indicators.
What’s the best way to store Cranberry Pie Bars?
To maintain their freshness and delicious taste, store your Cranberry Pie Bars in the refrigerator. After they have cooled completely, cover the pan tightly with aluminum foil or transfer the sliced bars to an airtight container. They will remain fresh and delightful for 3 to 5 days, making them perfect for preparing ahead of time for gatherings.

Can I freeze these Cranberry Bars for later?
Absolutely! These Cranberry Bars freeze beautifully. Once they have completely cooled, cover the pan with a layer of plastic wrap, followed by a layer of aluminum foil to prevent freezer burn. You can freeze them for 1 to 2 months. When you’re ready to enjoy them, simply thaw the bars in the refrigerator overnight before serving. This makes them a fantastic make-ahead dessert for busy holiday seasons.
Is the orange glaze essential, or can I skip it?
The orange glaze adds a wonderful citrusy brightness and an extra touch of sweetness, but it is entirely optional. If you prefer to omit it, your Cranberry Pie Bars will still be incredibly delicious. For an alternative sweet topping, consider serving them with a dollop of my Stabilized Whipped Cream or a scoop of creamy vanilla ice cream on the side for an added layer of indulgence.
Can I use other fruits with the cranberries?
While this recipe focuses on pure cranberry and orange flavor, you can certainly experiment! A small amount of finely diced apple or pear, or even a handful of raspberries, could complement the cranberries beautifully. Just ensure any added fruit doesn’t release too much extra liquid, which might require a slight adjustment to the cornstarch in the filling.

Cranberry Pie Bars
Ingredients
- 3 cups all-purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- ½ cup butter , room temperature (salted or unsalted is fine)
- ½ cup shortening
- 1 ¾ cups granulated sugar
- 3 large eggs
- 1 teaspoon pure vanilla extract
Cranberry Filling
- 2 ½ cups fresh or frozen cranberries (no need to thaw if frozen)
- ⅓ cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon orange zest
- 1 tablespoon fresh orange juice
- 1 teaspoon vanilla extract
Orange Glaze
- 1 cup powdered sugar
- 1 orange , zested and juiced
Instructions
-
Preheat your oven to 350°F (175°C). Prepare a 9×13-inch baking pan by lining it with a piece of parchment paper, ensuring it slightly overhangs the edges. This overhang will serve as handles to easily lift the finished bars from the pan for clean slicing.
-
In a medium bowl, thoroughly whisk together the 3 cups of all-purpose flour, 1 1/2 teaspoons of baking powder, and 1/2 teaspoon of salt. Set this dry mixture aside.
-
In a large mixing bowl, using a hand mixer, cream together the 1/2 cup of room-temperature butter and 1/2 cup of shortening until the mixture is smooth and well combined. Add the 1 3/4 cups of granulated sugar and continue mixing until fully incorporated, scraping down the sides and bottom of the bowl to ensure even mixing.
-
Beat in the 3 large eggs, one at a time, followed by the 1 teaspoon of vanilla extract, mixing until just combined. Gradually add the prepared flour mixture to the wet ingredients, mixing on low speed until the dough comes together. Be careful not to overmix. Set aside 1 1/4 cups of this dough; this will be used for the crumb topping.
-
Press the remaining dough evenly into the bottom of your prepared baking pan. For ease, I recommend placing small dollops of dough around the pan and then spreading them with an offset spatula to form a smooth, even crust. Bake for 12 minutes. The edges of the crust will turn lightly golden, while the middle may still appear slightly underbaked; this is normal as it will continue baking.
Cranberry Filling
-
In a large bowl, combine the 2 1/2 cups of fresh or frozen cranberries, 1/3 cup of granulated sugar, 1 tablespoon of cornstarch, 1 tablespoon of orange zest, 1 tablespoon of fresh orange juice, and 1 teaspoon of vanilla extract. Mix all ingredients well until the cranberries are thoroughly coated. Evenly distribute this vibrant cranberry mixture over the partially baked crust.
-
Take the reserved dough and crumble it in small, irregular dollops over the cranberry filling. Leave some gaps between the dough crumbles so that the beautiful red filling is visible through the topping.
-
Return the pan to the oven and bake for approximately 35-40 minutes, or until the topping is golden brown and the filling is bubbly. If the topping starts to brown too quickly, loosely tent the pan with a piece of aluminum foil. Once baked, remove the pan from the oven and place it on a wire rack to cool completely before proceeding with the glaze. Cooling fully is critical for clean slicing.
Orange Glaze
-
In a small bowl, whisk together the 1 cup of powdered sugar with the zest and juice from one orange. Start with a smaller amount of juice and add it gradually, 1 teaspoon at a time, until the glaze reaches a smooth, drizzly consistency.
-
Using a spoon, evenly drizzle the prepared glaze over the top of the completely cooled bars. Once the glaze is set, lift the bars out of the pan using the parchment paper and slice them with a sharp knife into your desired portions. Enjoy your beautiful and delicious Cranberry Pie Bars!
