Ingredients

  

  • 1 28- ounce bag Potatoes O’Brien
  • 1 16- ounce can refried beans
  • 4 corn tortillas
  • 8 eggs
  • 3 tablespoons canola oil divided and possibly more
  • 1 cup Monterey Jack cheese
  • 1 ½ cups salsa
  • ¼ cup chopped green onion
  • ¼ cup crumbled Cotija cheese
  • 3 tablespoons freshly chopped cilantro

Instructions

  • Note: This recipe works best with an extra pair of hands for assembly, but it is certainly manageable for one person.
  • Preheat your oven to its lowest setting. Place four serving plates and one additional plate (for warming tortillas) into the oven to gently warm. This ensures your Huevos Rancheros stay hot and delicious.
  • Cook half of the Potatoes O’Brien package according to the manufacturer’s directions. Aim for a golden, slightly crispy texture.
  • In a small saucepan over low heat, or in a microwave-safe bowl, gently warm the refried beans until heated through and creamy. Stir occasionally to prevent sticking.
  • Warm the salsa in a microwave-safe bowl until it reaches a pleasant serving temperature.
  • Heat one tablespoon of canola oil in a large skillet over medium-high heat. Fry the corn tortillas one at a time, for approximately 20 seconds per side, or until they are lightly browned and slightly crisp. Be careful not to make them too crunchy, as they need to be pliable.
  • As each tortilla is fried, transfer it to the warmed plate in the oven, separating them with a paper towel to absorb excess oil and keep them warm and soft.
  • Once all tortillas are fried, reduce the skillet heat to medium-low and add the remaining two tablespoons of canola oil. This is the perfect temperature for cooking your eggs.
  • Gently crack two eggs into the skillet at a time. Cook them for about two minutes. For perfectly set whites and delightfully runny yolks, gently spoon some hot oil over the tops of the eggs for the last minute of cooking. This technique helps to “baste” the yolks without flipping. YUM!
  • Begin assembly: Place one warm tortilla onto a heated serving plate. Spread approximately 1/4 to 1/3 cup of warm refried beans evenly over the tortilla.
  • Next, add about 1/4 of the cooked Potatoes O’Brien on top of the refried beans.
  • Sprinkle two generous tablespoons of Monterey Jack cheese over the potatoes. The warmth of the ingredients will help it melt beautifully.
  • Spoon two tablespoons of the warm salsa over the cheesy potato layer.
  • Carefully transfer two freshly cooked eggs on top of your layered creation.
  • Drizzle two additional tablespoons of warm salsa over the eggs and add another sprinkle of Monterey Jack cheese.
  • Finish with a colorful garnish of chopped green onion, crumbled Cotija cheese (for that authentic salty tang), and a generous sprinkle of fresh cilantro.
  • Place the completed plate back into the warm oven while you prepare the remaining Huevos Rancheros. Keep all finished plates in the oven until you are ready to serve everyone simultaneously, ensuring a warm and delicious experience for all.
