Last month offered a delightful escape to Fort Collins, Colorado, for a food blogger retreat – an experience that was as enriching as it was delicious. There’s an undeniable charm to exploring new places, savoring local flavors, and taking in the unique sights. For me, the opportunity to travel has become one of the most cherished benefits of food blogging, opening doors to adventures and discoveries I never anticipated.
While my profession often involves a great deal of solitary work in the kitchen, the true magic lies in the vibrant community it fosters. The friendships I’ve cultivated with incredible women from across the country, and even around the world, have become some of my deepest connections. It’s astonishing how technology bridges distances, allowing us to form such strong bonds through various online groups, making it feel as if we’ve known each other forever, even before meeting in person. This modern connectivity truly blows my mind, continuously proving that passion can unite people regardless of geographical separation.

The Dynamic World of Food Blogger Retreats
Any chance to gather with fellow food bloggers is an eagerly anticipated event. These retreats aren’t just about decompression, laughter, and a much-needed change of scenery; they’re intensely productive “business” meetings disguised as social gatherings. While we all share the common thread of food blogging, each of us approaches our craft with a unique perspective, shaped by individual personalities and business philosophies. This diversity makes for fascinating discussions. What one blogger might do one way, another, like Mary from Barefeet in the Kitchen, might approach with an entirely new, often simpler, method I hadn’t considered. The collaborative spirit is truly invaluable.
Our conversations span a wide array of topics, from innovative apps and website strategies to useful schedulers and, of course, endless food talk. Mealtimes at a food blogger gathering are a spectacle in themselves. The moment a dish arrives, phones are out, chairs become makeshift tripods, and plates are meticulously rearranged – all in pursuit of that perfect, Instagram-worthy shot. It’s a humorous ritual, but one we all understand and participate in. After the photo session, the quiet focus shifts to “working” as we meticulously post on Instagram, Tweet, update Facebook, or Snapchat our culinary adventures. It’s wonderfully comical, yet no one takes offense, because we are all doing precisely the same thing.

From Fort Collins Adventures to Recipe Inspiration
Beyond our blogging discussions, we carved out time to simply enjoy the beauty of Fort Collins. One memorable outing was a beer tasting at Funkwerks, a fantastic local brewery. Though not a regular beer drinker, I ventured to sample a few and was pleasantly surprised by their refreshing Raspberry Provincial, a true testament to the diverse world of craft beers.

Our culinary explorations led us to several superb restaurants in Fort Collins. It was at Stuft Burger Bar that I found the delicious spark for this very Beer Cheese Dip. The dip served there was so incredibly good that recreating it at home became an immediate priority. While they served their version with fried pretzels, I opted for a softer, homemade pretzel bite to complement the creamy dip – a choice that perfectly balances texture and flavor.

Leaving the breathtaking mountains of Denver and my newfound and old friends was bittersweet, but I know these connections are strong. We’ll undoubtedly pick up right where we left off at our next gathering, fueled by shared passion and delicious food.

The inspiration for these fantastic homemade pretzel bites comes from a great and easy recipe I adapted from Sally’s Baking Addiction. I simply transformed her larger pretzel recipe into these convenient, bite-sized pieces, perfect for dipping.
Beer Cheese Dip and Homemade Pretzel Bites

A slightly spicy beer cheese dip and homemade pretzel bites will be great to serve for movie night or when the gang comes over for Game Day!
Ingredients
Homemade Pretzel Bites
- 1 and 1/2 cups warm water (lukewarm will work)
- 1 packet quick or rapid rise yeast (about 2 1/4 teaspoons)
- 1 teaspoon kosher salt
- 1 tablespoon sugar
- 3 ¾ – 4 ¼ cups all-purpose flour (plus additional for dusting)
- 9 cups water
- ½ cup baking soda
- 1 egg, beaten
- Coarse sea salt for sprinkling
Beer Cheese Dip
- 4 ounces shredded Cheddar Jack cheese
- 2 ounces of an Amber Ale (I used Fat Tire)
- 2 ounces cream cheese
- ¼ teaspoon paprika
- Pinch of Cayenne pepper (more if you like it spicy)
Instructions
Homemade Pretzel Bites
- Preheat oven to 425°F (220°C) and prepare a baking sheet by lining it with parchment paper.
- Pour the warm water into a large bowl and sprinkle the yeast over it. Stir with a spoon to dissolve, about one minute. Some yeast clumps may remain, which is fine.
- Stir in the salt and sugar until well mixed.
- Gradually add 3 cups of flour, one cup at a time, mixing with a wooden spoon until the dough becomes thick.
- Add an additional 3/4 cup of flour until the dough is no longer sticky. If needed, incorporate another 1/2 cup of flour. The dough is ready for kneading when it bounces back when gently poked with a finger.
- Generously flour your work surface and knead the dough for approximately 3 minutes.
- Using a sharp knife, pastry cutter, or dough scraper, cut sections of the dough into roughly 1/3 cup sizes.
- Roll each dough section into a rope, ensuring even thickness, then cut into 1 to 1 1/2-inch pieces.
- In a large pot, combine the 9 cups of water and 1/2 cup of baking soda. Bring the mixture to a boil.
- Gently place about 10-15 dough pieces into the boiling water. Boil for 20-30 seconds. Do not exceed this time, as it can affect the taste. Remove the pieces from the pot with a slotted spoon and place them onto the prepared baking sheet.
- In a small bowl, beat the egg. Individually coat each pretzel piece with the beaten egg. Return them to the baking sheet and sprinkle generously with coarse sea salt.
- Bake for 10 minutes at 425°F (220°C). Without removing the baking sheet, switch the oven to broil (grill) setting and bake for an additional 3-5 minutes to brown the tops. Watch them very closely, as they can darken quickly.
- Allow the pretzel bites to cool slightly before serving.
Beer Cheese Dip
- In a small saucepan, combine the shredded Cheddar Jack cheese, your chosen Amber Ale, cream cheese, paprika, and Cayenne pepper.
- Stir continuously over low heat until all ingredients are melted and the dip is smooth and creamy.
- Serve warm with the homemade pretzel bites.
- For the best taste and texture, both the pretzel bites and the cheese dip are best enjoyed the same day they are made.
Notes
To increase the amount of Beer Cheese Dip for a larger gathering, use the following proportions:
- Amber Ale – 1 part
- Cream Cheese – 1 Part
- Cheddar Jack – 2 parts
Increase paprika by 1/4 teaspoon and add Cayenne pepper to taste for desired spiciness.
