For the Hummus
- 1 (15-ounce) can Bush’s Beans garbanzo beans (chickpeas), drained with water reserved, and rinsed
- 2 ½ tablespoons olive oil
- 2 tablespoons tahini
- 2 tablespoons homemade taco seasoning
- 1 tablespoon lemon juice
- 3-5 tablespoons reserved chickpea water
For Assembly
- 4 tortillas or flatbreads
- ½ cup baby spinach
- 2 tomatoes, thinly sliced
- 2 tablespoons thinly sliced red onion
- 1 (15-ounce) can Bush’s Beans Seasoned Recipe Black Beans, drained and rinsed
- ¼ cup Mexican Style shredded cheese
- 2 tablespoons freshly chopped cilantro
Instructions
Making the Hummus
- Place all of the hummus ingredients, starting with three tablespoons of the reserved chickpea water, into a blender or food processor.
- Blend until completely smooth and well combined. If a creamier consistency is desired, add additional chickpea water one tablespoon at a time, blending after each addition. Be careful not to make it too runny; aim for a thick, spreadable texture that holds its shape.
Assembling Your Wraps
- Lay out a tortilla or flatbread. Spread approximately two tablespoons of the prepared taco hummus on one end, and an additional tablespoon on the opposite end. This helps create a “seal” when rolling, preventing the wrap from unraveling.
- Arrange a few fresh baby spinach leaves over the hummus. Top with a few slices of thinly cut tomato and some delicate red onion slices for crunch and flavor.
- Spoon two tablespoons of the drained and rinsed Bush’s Beans Seasoned Black Beans evenly over the vegetables.
