Crockpot Spare Ribs – an easy meaty dinner with carrots and potatoes covered in a tangy sauce. This tender, hearty meal is perfect when you don’t want to turn on the oven in the summer or want comfort food in the winter.

  • 3 lbs. boneless spare ribs beef or pork
  • 2 tablespoons chopped onion
  • 6 tablespoons lemon juice
  • 3 tablespoons white vinegar
  • 1 tablespoon Worcestershire sauce
  • 3 tablespoon light brown sugar
  • 6 tablespoons water
  • 12 ounces Heinze chili sauce
  • 1 teaspoon salt
  • ½ teaspoon freshly ground pepper
  • 4-6 carrots
  • 5-7 medium potatoes

Instructions

  • Turn crockpot onto low, and cut the ribs into single servings. 
  • Prepare a large skillet by coating it with cooking spray. Place ribs in the skillet over medium high heat and sear on all sides. 
  • Peel potatoes and carrots. Cut them into thirds, then halves. Place half of potatoes and carrots in the bottom of the crockpot. 
  • Place the browned spare ribs on top in a single layer if possible. Cover with the remaining carrots and potatoes. 
  • In a blender, combine onion, lemon juice, vinegar, Worcestershire sauce, brown sugar, and chili sauce. 
  • Blend on high until all ingredients are mixed well. Evenly distribute the sauce over the carrots and potatoes. 
  • Cook until meat is fork tender and shreds easily- low for 8-10 hours, or high for 4-6 hours Stir occasionally while cooking. This dish tastes best when everything is mixed together.

Notes

If you prefer to buy bone-in ribs, purchase 4.5 lbs. to make this recipe, and you may need to use the least amount of vegetables called for.
